Sausage and Roasted Vegetable Salad Makes 4 servings 2 medium zucchini or yellow squash (or 1 of each), sliced %-inch thick ding precooked breakfast sausage to a saladis a flavorful wayto incorporate protein. 2 red or yellow bell peppers (or 1 of each), cut into 1-inch chunks 4 large shallots, peeled, quartered lengthwise 2 tablespoons extra virgin olive oil 2 tablespoons balsamic vinegar 2 cloves garlic, minced 1 teaspoon dried rosemary, crushed % teaspoonsalt % teaspoon freshly ground black pepper 1 package (7 oz.)
